“Diples” is a delicious egg dough served with a lot of honey and cinnamon. It is considered to be a Christmas sweet, but actually it is a wedding dessert offered in many areas of Greece.
Diples is a traditional Messinian sweet, offered in engagements and weddings in several parts of Greece. It is said that the more the furls of Diples, the more the bonding and happiness of the couple.
2 vanilla beans
baking soda tip of the teaspoon
1 pinch of salt
3 ½ cups of plain flour
Olive oil for frying
For the topping syrup
500 g of thyme honey
1 cup of water
½ teaspoon of cinnamon powder
½ teaspoon of crushed cloves
Pour the 2/3 of the flour to make it a thick dough. Grease your hands and knead, adding the remaining flour little by little. Knead until the dough does not stick to your hands. Cover and leave the dough to rest for at least 30 minutes. Roll out a very thin pastry dough with a rolling pin on a floured surface.
Cut into strips, about 20 × 15 cm. After cutting all the Diples (put them on a towel until all of them are prepared), heat the oil in a frying pan. Fry the Diples one by one. Once blisters are formed on the surface after 30 seconds, with two forks, roll them longitudinally by folding them. Fry until golden and crisp, then drain on kitchen paper.
Mix the honey with 1 cup of warm water and pour it on the Diples carefully, to cover them all. Sprinkle with walnuts, cinnamon powder and crushed cloves.
